Ginger, Lemon and Honey Tea

Friends have been asking for the tea recipe that I made Tracy while he was sick. Here it is!

1) Ginger (fresh)

2) Lemon juice (I used a fresh squeezed lemon)

3) Honey

That’s it!

Why ginger, lemon and honey?

Well, you probably know that lemon is high in Vitamin C. It is also full of phytochemicals. These are plant constituents that help boost the immune system and much more.

Here’s what you do: (you may need to experiment with amounts to get the taste that suits you)

Fill up your teakettle and get it boiling.
Meanwhile, grate a one-inch piece of fresh ginger root.
I used my air pot.
Put the ginger in the air pot.
Put a dash of lemon juice in the air pot. A dash is about 4 tablespoons. Actually, it’s less of a dash and more of a small splash. :)
Add a dash of honey as well. A dash in this case is about three tablespoons. Basically, add the honey to taste.
When your water is boiled, pour it in the air pot.
Cover it up and let it sit for 20 minutes.
Strain into a tea cup and enjoy!

If you lack a air pot, you can also just simmer the water in an open pan with the ginger for 15 -20 minutes as well. Add the lemon and honey to the pot AFTER you are finished simmering ginger. Just strain it into your cup. When you want more, just heat it back up. I just like the air pot because when your sick it’s hard enough just to get up let alone heat something up.

You can vary the amounts as well. Play around so you get a flavor you really like. It tastes great!

Benefits of Honey

So Tracy was really sick this last week and I did some research on hot teas for him. Everything I read used honey. It was amazing reading all the benefits of it. Now I need to convince Tracy that getting a bee hive would be a great idea!

I’m Back!


Sorry everyone that I have been away so long. 2012 has not been a great year. Between life events and illness it has been a tough one. So to begin the year I am going to post 2 really great Baked Oatmeal recipes. Perfect on cold mornings! ENJOY!

Baked oatmeal (This is my Nephew Barry Marshall’s recipe)

1 egg, 1/2 c. sugar, 1 1/2 c. oats (not instant), 1 c. milk, 1/4 c. oil, 1 tsp. baking powder, 1 tsp cinnamon (optional),add any fruit.

Mix all together, Dump into a greased 8×8 pan and bake @ 350 for 20-25 min. Needs to be cake like when done.

Now to make it healthy, I substitute applesauce for the oil and use diced apples for my fruit. I also use goats milk in place of regular milk.

Apple Baked Oatmeal (Simply Delicious, The Costco Way)

2 c. oatmeal (not instant), 1 1/2 tsp. baking powder, 1/2 tsp. salt, 1/4 c. chopped pecans, 1/4 c. raisins or dried cranberries, 2 cups diced apples, 3 large eggs, 2 cups milk, 1/3 c. brown sugar, 1/2 tsp. cinnamon
Mix oats, baking powder and salt. Stir in pecans, raisins and apples. In another bowl whisk together eggs, Milk, brown sugar and cinnamon. Pour over dry ingredients and mix. Dump into a greased 8×8 pan and bake at 325 for 1 hour, until golden brown. Serve warm!

Tracy’s Kombucha Tea: Part 1

Hello Blog Family! Kellie’s Husband Tracy here!!!!

As some of you may know, I have a fascination with beverages. I love to find new and unique things to drink. Maybe it’s because I require a lot of fluids and just drinking water gets boring. I seem to always have a beverage within my reach. As you should know, I love coffee. Good coffee! It’s not “just” the caffeine, but I do like that part to.

That being said, every time we hit the natural grocery stores, I always stop off at the drink cooler to see what looks good. Well, several years ago while doing this, I grabbed a flavored Kombucha Tea and was forever hooked. I really love to drink the stuff, but I HATE to pay for the stuff! Around here, a bottle of GT’s Kombucha Tea cost’s around $4. Up in the mountain towns, it’s more. I CAN BUY TO LARGE COFFEE’S FOR THAT! Then one day while surfing around the net, I came across a web site talking about Kombucha Tea’s many (possible) health benefits ….AND… how you could brew it yourself! No Way! WAY!!! You sure can! And, it’s a  pretty cool process at that.

So, I took on the challenge to make my first batch. Kombucha Tea is made through a fermentation process involving brewed tea (black or green), sugar, a small amount of already brewed  Kombucha Tea and a Kombucha SCOBY (Symbiotic Colony of Bacteria and Yeast). Ok, that last thing might throw you but it is basically a living culture that looks like a flat, white disc. (see picture to the right) The SCOBY is floated in the tea/sugar mix and it feeds off of it. It converts it to Kombucha Tea. The SCOBY “mother” also grows more SCOBY “baby’s” that can be peeled off and used in other batches or past on to friends so they can make their own tea. The tea itself, after the proper process, is slightly acidic, kinda tangy and naturally carbonated from the fermentation process. It can be flavored with all kinds of things or consumed straight (RAW).

Now for my experience so far. To get the process started, I had everything except for the SCOBY. (I don’t usually have those just lying around) You can sometimes buy them at your local health food store, but I was unable to find one. Anyway, I like to do things all the way, so I decided to “grow my own”. Yeah, you can do that too!

GROWING A Kombucha Tea SCOBY

Things you need:
1 – clean, sterile glass jar/container (one gallon best…glass only)
2 – bottles of raw Kombucha Tea (no flavors, just raw… from local health food store)
1 – gallon of fresh water (bottled or distilled best, but tap water works)
6 –  tea bags (green or black, but not herbal… must have caffeine)
1 – cup of plain white sugar
1 – old, white cotton t-shirt
1 – rubber band
1 –  Dark, warm, undisturbed place

Directions:
Boil the water for about 10 to 15 minutes to clear the chlorine from the water. Pour the water into the glass jar (make sure to leave enough room for the SCOBY and the 2 bottles of tea) and add the 6 tea bags. Steep for about 15 minutes. Remove the tea bags and pour in the sugar. Mix till sugar is dissolved completely. Now let sit till the mixture is room temperature. DO NOT RUSH THIS PART OR YOU WILL KILL THE CULTURE AND NOTHING WILL HAPPEN . MAKE SURE IT”S COOLED OFF! Once the temp is at or below 80 degree, pour in the 2 bottles of “Raw” Kombucha Tea you bought at the store (the SCOBY will grow from the active cultures in the tea) . Now cover with the t-shirt and secure with the rubber band.
NOTE: The t-shirt lets it breath while keeping out particles that could cause mold. Place the whole thing in a warm, dark place that will be undisturbed for the process. NO MOVEMENT! Let sit for about 30 days… until the SCOBY forming on top is about 1/4 inch thick. When it’s thick enough, wash your hands good, remove the SCOBY, about 2 cups of the “tea” and place them together in a bowl. Now dispose of the rest of the tea! YES, pour it out as it will be to acidic and not suitable to drink.

That’s it! You just grew your own SCOBY! Now your ready to start you first actual brewing of Kombucha Tea. It is going to be exactly the same process as growing the SCOBY, except you will be adding the SCOBY and the 2 cups of “starter tea” you saved from the growing process. This SCOBY can be used over and over again to make tea. It will grow a new “baby” every batch. You can use them or pass them on. Here is were the process is different:
In about 5 days, get the jar out and test the tea. Do this by sliding a straw past the SCOBY and sip a little tea. If it’s still very sweet, cover it and put it back. It needs to brew longer. It it is very vinegary tasting and very acidic, it went to long and you need to start over. If it is slightly tart and slightly acidic with a little tang, it’s ready to bottle and drink!

Ok, this is where I’m going to stop for now. I am on my second batch of tea after growing my SCOBY. My first batch went to long and went vinegar. I had to start over. I am on day 7 and I am testing day by day till its perfect. I will give a video update (Part 2) when it’s done!

Homemade Stewed Tomatoes

This recipe has been requested by several:

6-8 fresh tomatoes, peeled and cubed (Boil your tomatoes for a few minutes, until the skins crack then run under cold water and the skins will fall right off)

2 stalks celery, chopped

1 bell pepper, chopped

1 onion, chopped

1 tsp. Italian seasoning

1 Tbsp. Sugar

Throw everything in the crockpot and cook on low for 4 hours.

You can either can this or freeze.

Makes 4 cups.

Chicken Marinade

 This past year I got in a funk about meals because of needing to eat healthier. My chicken meals were the worst and we eat alot of chicken. I had to quit buying marinades for chicken due to the sodium content (just check out the label). So I finally decided to make my own marinades (testing them on my family). Here is a recipe that everyone seems to like:
1/4 c. vinegar
3 tsp. dijon mustard
4 cloves garlic
1 lime juiced
1 lemon juiced
* Did you know that you can freeze Lemons and Limes whole for juicing purposes only. So when there on sale buy several to have on hand for recipes.
1/2 c. brown sugar
1  tsp Kosher salt
6 tbsp Olive Oil
1/4 tsp pepper
*adjust whatever to your families tastes

I pound out 8 chicken breast slightly, throw them into a Gallon ziplock bag and marinate for 2 hours to overnight. The longer you marinate the better the chicken. When done marinating just grill. This is kinda a sweet marinade so I would serve this with either a salad or green beans.

I will post more marinades as I make them up and test them on my family!

Spreadable Butter

Spreadable Butter

2 cups butter(softened) to 2 cups extra light olive oil. The extra virgin olive oil was way too heavy a taste for us.
Mix really well with a mixer until smooth.
This is so much healthier than margarine! (just check out the spreadable butter label bought from the store!)

Homemade Cinnamon Rolls

Today I’m making 4 pans of Cinnamon rolls ( 1 to eat now and 3 to freeze). These are not considered healthy but compare the ingredients in these to store bought and these are better for you!

Here is my recipe:

2 tbs Yeast
1 3/4 c. Warm Water (105-115 degrees)
1/2 c Sugar
1 Egg
1/4 c. oil ( I use extra light Olive oil, don’t use the regular or it will give your rolls a funny taste, trust me!)
5-5  1/2 c. Flour

* Dissolve Yeast in Warm Water. Add all ingredients. Dough will clean sides of bowl when ready. (Knead until nice and smooth) Let raise until doubled.

Take 1/2 the dough, roll out in lg. rectangle. Spread w/ melted butter then sprinkle with a cinnamon/sugar mixture. Roll up and cut about 1-1 1/2 inch thick. You can cut smaller but we like a larger roll. Let raise 15-20 in a warm place. Bake at 350 for 15-20 min. or until golden brown.

Frosting

1 stick butter (softened)
1 tsp. vanilla
milk (use amount to desired consistency)
Powdered Sugar 2-3 cups

These are aprox amounts.

With this recipe I usually can get 2 9×13 pans. These freeze really well. If you decide to freeze these, bake them first then wrap them really well before you put up in the freezer.

The Famous Kellie Jelly!

So I new last night before I went to bed that we were gonna get snowed in today so I decided to get some canning done. We didn’t get snowed in but I have chosen to make this a snowed in day! It is now 12:30 and I have 11 1/2 pints of Cranberry/Strawberry jam done and 8 pints of pizza sauce done. I am having so much fun today, I’m looking to see what else I can can before I have to put the caner and jars back in the attic. My house smells soooooooooo good! I love days like this! Hey there everyone! Welcome to “Homegrown and Happiness”. The reason I have started this blog is because I have been bombarded with questions from people about all the frugal, healthy things I do. After much prayer and advice from close friends, my husband has worked to get this up and going for me. God gave me a scripture for this new adventure in my life, Titus 2:3-5.
